Cocoa, Honey and Dried Fruit Brownies

Whatever the time of the year, it always feels good to have some sweet brownies. They are comforting for the stomach and for the soul! There are many recipes for brownies (fortunately!) and in this post we are going to share with you how we make ours at home. For the coming Christmas, for birthday parties and other special occasions or simply when you feel like brightening up someone's day, we hope you enjoy this special treat. At the end of the post, also watch our video where we show you how to do it step by step.






So let's jump into the recipe!



Ingredients


  • 340g Pumpkin Puree (watch this video or this one to know how to make pumpkin purée)
  • 105g Honey
  • 80g Coconut Oil
  • 150g Oat flour
  • 50g Raw Cocoa Powder
  • 2 TBSP Baking Powder
  • 25g Chopped Walnuts
  • 25g Chopped Almonds



Method


  1. Make fresh pumpkin purée or unfreeze if already done.
  2. Preheat the oven to 180ºC.
  3. In a small pot melt the coconut oil together with the honey.
  4. In a food processor add all the ingredients. First the pumpkin purée, then the coconut oil with the honey and then the flour, cocoa, baking powder and dried fruits.
  5. Mix until evenly blended.
  6. Line a baking tray with parchment paper and pour the dough.
  7. Bake at 180ºC for 25 minutes. The brownies should be slightly undercooked.
  8. Remove from the oven and let cool.
  9. Cut into squares.
