Homemade Lemon Ice Cream - 3 Ingredients - DIY

Making ice cream at home is not complicated and you don't need to use specific machines. Now that summer has come and we also have the lemon tree loaded with lemons, we want to share our super simple and quick recipe for lemon ice cream that takes 3 ingredients only. This is a much healthier alternative to store-bought ice cream and also avoids tossing another package in the trash. See our educational video at the end of the post.





We like to do our own things because we have more control over the ingredients. This ice cream does not take sugar and the ingredients are very easy to find.


Recipe


  • 4 Unsweetened natural Greek yogurts
  • 1 Medium lemon (zest and juice). Make sure that the lemon is organic, since zest is also consumed in the ice cream.
  • 6 TBSP Honey


For us, in this recipe, only yogurts are purchased, since we have lemons and we already produce honey too. It is so good going to the garden instead of going to the supermarket!



How To Do It



  1. Extract both zest and juice from the lemon.
  2. In a large bowl, combine the yogurts, honey, juice, and zest.
  3. Stir with a hand blender until everything is well mixed.
  4. Pour into ice cream molds.
  5. Freeze.
The time in the freezer can vary according to its capacity. We usually make this ice cream in the evening to eat as a dessert after lunch next day.

This ice cream is not creamy as it doesn't take cream or other ingredients to control the texture. Still, it is very tasty, balanced, and refreshing.
